At least today we have pie.
2 1/2 quarts fresh strawberries
1 cup white sugar
2 T cornstarch
1 cup boiling water
1 package strawberry flavored gelatin
in a saucepan, mix together the sugar and corn starch; make sure to blend corn starch in completely. Add boiling water, and cook over medium heat until mixture thickens. Remove from heat. Add gelatin mix and stir until smooth.
Place strawberries in baked pie shells, pour cooled gel mixture over strawberries.
Refrigerate until set.
1 1/2 cups flour
1/2 t salt
1/2 cup butter chilled and diced
1/4 cup ice water
in a large bowl combine flour and salt. Cut in butter until mixture resembles coarse crumbs. stir in water a tablespoon at a time until mixture forms a ball. Wrap in plastic and refrigerate 4 hours or overnight.
Roll dough out to fit pie plate.
Bake 350 for 15 minutes.
